Kuchisabishii - Japanese Rice Lager with Yuzu
Kuchisabishii (ćŁćŻăă) is a uniquely Japanese word meaning âLonely Mouthâ and describing the act of eating or drinking when youâre not actually hungry or thirsty. We thought it was a perfect name for our Japanese Rice Lager with Yuzu which we think is delicious whether youâre hungry or not. Brewed by turning our kettle into a âCereal Cookerâ and making enough rice for a small army before introducing the cooked rice into a light pilsner malt mash. We used a neutral lager yeast strain and added Yuzu and Lime post fermentation to give a delicately balanced lager with some citrus complexity.
