Our Northern IPA Innovation Series explores how cool-fermented ale yeast can reshape hop expression, pairing modern aromatics with crisp, northern drinkability.
For the science bit: Aurora yeast ferments cool promoting clean fermentation while allowing soft fruit and floral esters to shine. Yeast-driven biotransformation releases bound hop compounds, amplifying layered aromatics and blending them with its own character. The result is a bright, balanced IPA with a lean body, expressive aroma and a clean finish.
For the flavour bit: For the first of the series weāve started with a more traditional West Coast base and paired up Citra, Mosaic and Strata, a combination we know and love, to see how hops are expressed under new conditions. Expect notes of grapefruit, berries, passionfruit and weed.
